The porchetta of Ariccia

Porchetta is the heart of Castelli Romani, a symbol of tradition that has been handed down for generations and is in fact considered a historical product sought after by the whole world. The craftsmanship is handed down from the ancient Romans and begins with the boning, strictly by hand. After removing a little fat, the aromatization work begins with salt, pepper, garlic and rosemary and after having stitched the pork, following the typical shape, we move on to the cooking process. The typical dishes with porchetta are the platters of appetizers, sandwiches and stuffed ravioli. The Porchetta of Castelli Romani has obtained the famous IGP mark, and despite the many reproductions in Italy and abroad, that of Castelli Romani remains the number one, free of additives and preservatives. Porchetta therefore becomes a symbol of lightheartedness, thanks to the ease with which it is possible to taste it standing up, enjoying the beautiful landscapes of Castelli Romani or accompanied by a delicious glass of red wine.
