The famous ice cream truffle of Pizzo

The dessert par excellence that is linked to the name of the city of Pizzo is the so-called 'truffle', which has nothing to do with the homonymous land product except for its appearance. It is said that this dessert was invented by a master ice cream maker originally from Sicily, but who then moved to live and work in Pizzo. He had to make the cake for an important wedding and he wanted to amaze everyone. So he used the hemispherical shapes he had in his laboratory, filling one half with hazelnut and the other half with chocolate. In the center he put some cherry and then let everything rest in the fridge. Once the cake was turned out, he covered it with cocoa and sugar. He called his creation truffle because it seemed to him that it resembled the mushroom of the same name. This ice cream dessert was born in 1953 and has since been a great success and is loved all over the world. Today, cherry is no longer placed in the center, but dark chocolate is used. The peculiarity of the real Pizzo truffle is that the chocolate must always remain liquid and fluid.
